We cook one way: over live fire. The catch comes in at dawn, the coals are lit by noon, and by evening the room smells of oak and salt. Nothing here is complicated, and nothing is rushed.

One hearth, at the heart of it

Oak, olive wood, and open coals. Fire is the oldest way to cook and still the most honest, coaxing sweetness from a vegetable and a whisper of smoke into the catch.
